Braised Cabbage
Cabbage is one of the cheapest vegetables around, and braising it transforms it completely — from crunchy and raw into something silky, mellow, and almost buttery. This is a dead-simple side dish that works with almost anything. Four ingredients, one pan, done in 30 minutes.
Ingredients
- 2 tablespoons vegan butter (e.g. Earth Balance), plus more to finish
- 1 small onion, sliced
- 1 head white cabbage, shredded
- ½ cup vegetable broth
- Coarse salt and black pepper
Instructions
Melt the butter in a wide pan over medium heat. Add the onion and cook until soft, about 5 minutes.
Add the shredded cabbage and toss to coat. Pour the broth over, cover with a lid, and reduce heat to low.
Simmer for about 30 minutes, tossing gently halfway through, until the cabbage is wilted but still has a little bite.
Remove from heat, toss again, and add another small pat of vegan butter if you like. Season generously with coarse salt and black pepper.
Serve as a side to anything — tofu, seitan, lentils, or alongside a hearty soup. Leftovers are great stirred into pasta or added to broth for a quick soup.
