Creole Potatoes and Peas

A warming, hands-off side dish that’s heavy on the creole spices. The Dutch oven does all the work - just prep, season, and let the oven handle the rest.

Ingredients

  • Oil spray
  • 3 medium potatoes, peeled and chopped
  • 1/4 cup vegan butter, melted
  • 3 tbsp creole seasoning
  • 1/2 red onion, cubed
  • 8 oz frozen baby sweet peas (do not thaw)

Instructions

  1. Preheat oven to 400°F.

  2. Wash, peel, and chop the potatoes.

  3. Spray the bottom of a Dutch oven with oil spray.

  4. Add potatoes in a single layer - don’t pile them up.

  5. Pour melted butter over the potatoes.

  6. Generously add the creole seasoning.

  7. Cover and bake for 26 minutes.

  8. Remove from oven, lift the lid, and add the onions and frozen peas directly from the freezer.

  9. Cover and return to oven for 11 more minutes.

  10. Remove and gently mix with a wooden spoon, being careful not to mush the potatoes.

  11. Transfer to a serving bowl and optionally top with extra creole seasoning.
