General Tso's Sauce

This versatile sauce captures the sticky-sweet-spicy flavor of takeout General Tso’s. Make a batch in 10 minutes and use it on crispy tofu, fried cauliflower, or vegan chicken nuggets. The recipe scales easily - it’s equal parts soy sauce, rice vinegar, and sugar.

Ingredients

  • 6 cloves garlic, minced
  • 2 scallions (white parts sliced, green parts saved for garnish)
  • 1/2 cup soy sauce
  • 1/2 cup rice vinegar
  • 1/2 cup sugar
  • 1 tsp chili flakes (adjust to taste)
  • 1 tsp sesame oil
  • 2 tsp corn starch
  • 2 tsp cold water

Instructions

  1. Slice the scallions, separating whites from greens. Save green tops for garnish.

  2. Heat sesame oil in a pan over medium heat. Add scallion whites and minced garlic. Cook until soft and aromatic, about 2 minutes.

  3. Add soy sauce, rice vinegar, sugar, and chili flakes. Bring to a light boil, stirring to dissolve the sugar.

  4. In a small bowl, mix corn starch with cold water until smooth.

  5. Add the corn starch slurry to the sauce. Cook until thickened, about 5 minutes.

  6. Serve over crispy tofu, vegan chicken, or vegetables. Garnish with reserved scallion greens.

Stores in the refrigerator for up to 5 days.
