Homemade Seitan Steaks
These simple seitan steaks have a firm, meaty texture that’s perfect for pan-frying. Made with vital wheat gluten, they come together quickly and can be seasoned however you like. Serve with fries and gravy for a classic comfort meal.
Ingredients
Seitan
- 1 cup (165g) vital wheat gluten flour
- 3 tbsp nutritional yeast (optional)
- 1 tbsp paprika
- 1/2 tsp salt
- 3/4 cup (180ml) cold water
- 2 tbsp soy sauce
For Simmering
- 5 cups water
- 3 bay leaves
For Serving
- Oil for pan-frying
- 2-3 tbsp soy sauce
Instructions
Whisk the vital wheat gluten with nutritional yeast, paprika, and salt in a bowl.
Mix the cold water with soy sauce, then add to the dry ingredients. Stir and form a dough ball.
Knead for about 1 minute to activate the gluten. Let rest for a few minutes.
Flatten the dough into a thick disc and cut into 4 pieces. Gently stretch each piece to flatten slightly.
Bring 5 cups water with bay leaves to a boil, then reduce to a gentle simmer (not a full boil - this is important for texture).
Add the seitan pieces and simmer for 30-40 minutes, partially covered, until firm.
Remove and press out excess liquid with paper towels.
Heat oil in a pan and fry the steaks until crispy on both sides.
Toss the fried steaks with 2-3 tbsp soy sauce to coat. Serve hot.
The simmering liquid can be used to make gravy - just cook down with onions and a splash of plant cream.
