Protein Bread Rolls
These protein-packed bread rolls are a game-changer for anyone looking to boost their protein intake. With 23g of protein and only 150 calories per roll, they’re perfect for meal prep, sandwiches, or as a satisfying snack.
Ingredients
- 2.5 tsp active dry yeast
- 1 tsp sugar
- 1 large cup warm water (about 1.25 cups/300ml)
- 1 tsp salt
- 1 Tbsp mixed seeds
- 4 Tbsp flax meal
- 4 Tbsp chickpea flour
- 2 cups vital wheat gluten flour
Instructions
In a large bowl, combine the yeast, sugar, and warm water. Let sit for 5-10 minutes until foamy and activated.
Add the salt, mixed seeds, flax meal, and chickpea flour to the yeast mixture. Stir to combine.
Add the vital wheat gluten flour and mix until a dough forms. The dough will be quite elastic due to the high gluten content.
Knead the dough for 3-5 minutes until smooth and well combined.
Divide the dough into 8 equal portions and shape each into a round roll.
Place the rolls on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let rise in a warm place for 30-45 minutes, or until slightly puffed.
Preheat your oven to 400°F (200°C).
Bake the rolls for 26 minutes, or until golden brown and they sound hollow when tapped on the bottom.
Remove from the oven and let cool on a wire rack before serving.
These rolls store well in an airtight container for 3-4 days, or can be frozen for up to 3 months. Toast them for best results when reheating.
