
Simple Vegan Pancakes
These simple vegan pancakes come together in minutes with ingredients you probably already have. For extra protein, swap half the white flour for vital wheat gluten flour. Serves 2 (light appetites).
Ingredients
- 1/2 cup white flour (or 1/4 cup white + 1/4 cup vital wheat gluten for extra protein)
- 1 tsp baking powder
- Pinch of salt
- 1 tbsp vanilla extract
- 2 tbsp oil
- Soy milk (about 1/2 cup, see instructions)
Instructions
Add the flour, baking powder, and salt to a bowl. Mix together.
In a measuring cup, add the vanilla and oil, then fill with soy milk to the 2/3 cup mark.
Pour the wet ingredients into the dry and mix until combined. The batter should be quite thick. Add a splash more soy milk if too thick, or a bit more flour if too thin.
Heat a pan over medium heat. Using a thick spoon or 1/8-1/4 cup measure, scoop batter into the pan.
Fry until the bottom is firm and golden brown, then flip and cook the other side until done.
Serve with maple syrup, fresh fruit, or your favorite toppings.
