TVP Breakfast Porridge

This surprising breakfast hack uses textured vegetable protein (TVP) - usually found in savory dishes - to make a sweet, oatmeal-like porridge. It’s high in protein, low in carbs, and incredibly filling. A great option if you want to switch up your morning routine.

Ingredients

  • 1/3 cup TVP granules
  • 2/3 cup unsweetened plant milk (soy or almond work well)
  • 1/4 tsp cinnamon
  • Sweetener to taste (maple syrup, sugar, or low-carb sweetener)
  • Optional: vanilla extract, nutmeg, fresh fruit, nut butter

Instructions

  1. Combine TVP, plant milk, cinnamon, and sweetener in a small pot.

  2. Bring to a boil, then reduce heat and simmer for 10-15 minutes, stirring often to prevent sticking.

  3. Cook until TVP is soft and has absorbed most of the liquid.

  4. Serve warm, topped with your favorite additions like berries, banana, or a spoonful of peanut butter.

Makes 1 serving. Recipe scales easily - just maintain the 1:2 ratio of TVP to milk.

Keeps in the fridge for a few days. Reheat or eat cold.
